I like old things. Tattered and tarnished pieces appeal to me the most. I see the potential beauty underneath everything rusted and worn.

Most of my jewels are reworked vintage mixed with new chains, charms, etc. I love to incorporate various items I've picked up from my travels around the globe. My world currency coin rings are a favorite.

I also have a small etsy shop where some of my travel photos can be purchased called pixelElation. I use a bunch of fun overlays and borders to give them interest. Nothing is more boring then looking at someones standard old vacation photos, right?

When I'm not making jewels I'm tending to my 6 month old son Milo. I started making cupcakes during his nap times out of boredom. Many people have been asking me for my recipes so I decided to post some of the big hits for your baking pleasure. Hope you enjoy my blog and thanks for reading!

Waffle Cake

This waffle cake is prized throughout most of Russia, Poland and the Ukraine. My neighbor is from the Ukraine and exposed me to the wonders of this delicious treat at her son’s birthday party. It’s so easy, no baking involved just some boiled condensed milk, butter and some wafer type cookies the Russians call waffles.

If you want you can boil your own condensed milk. Just put the entire can into boiling water and leave completely covered for about 3 hours. Wikihow has a pretty good tutorial here’s the how to.

Immerse closed can on its side in a pot of water and bring to a boil.


Leave on a simmer or light boil for 2 to 2 and a half hours, topping up with water as needed. Be careful and don’t let the water dry out or the can could explode.

Remove from heat and let cool thoroughly before opening can. Don’t open the can while its still hot. The condensed milk should be thick and a nice caramel color.

I am lucky enough to live in Bay Ridge, Brooklyn so I walked to the Russian specialty store on my corner and bought the Russian brand boiled condensed milk. It’s apparently much better than the American kind according to my neighbor. She’s never let me down before so I went with her advice. The waffles and 2 cans of boiled milk were under 7 bucks to make a cake that serves 8… not too shabby.

I added half a stick of butter to each can of boiled condensed milk to bulk up the filling. You can probably get by with only one can but I wanted a super caramel flavored cake. You can make as many layers as you choose. I used the entire pack of waffles as not to waste them.

After mixing 2 cans boiled milk caramel with a stick of soft (not melted) butter I heated it up for like 20 seconds just to get a nice smooth consistency. Next I began to layer the waffles with caramel, layer by layer until I used the whole pack. Leaving the top waffle clean with no caramel. I found a few people suggesting to cover the cake with foil or parchment then laying a heavy book on top to help speed up the caramel saturation of the wafers. You can leave it set for about 3 hours or even overnight If you choose! Feel free to top with whatever floats your boat. I just added some whipped cream and a sprinkle of nuts!

Next I want to try a Kiev Cake, seems tough but it’s so tasty!

The best place to edit/create printables and photos is Picmonkey! It’s fun and easy to make the graphics for your event on your own. It does take a little time but the end result is worth it. You can make exactly want you want and save money.  Some of the party printable sets I’ve seen online are so expensive!

Root Beer Float Cupcakes:


2 cups sugar
1-3/4 cups all-purpose flour
3/4 cup Hershey’s Cocoa
1-1/2 teaspoons baking powder
1-1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract, 2 teaspoons root beer extract
1 cup boiling water

*Makes about 30 cupcakes*

ICING

2 cups Heavy cream

1/4 cup Confections sugar.

DIRECTIONS:
For the cupcakes, preheat oven to 350°F. Line muffin cups with paper baking cups. In a large bowl, stir together sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, milk, oil, vanilla and root beer extract; using a handheld electric mixer or an electric stand mixer, beat on medium speed for 2 minutes. Stir in boiling water. The batter will be on the thinner side. Fill the muffin cups 2/3 full Then bake for 18-23 minutes, until a toothpick inserted in the center comes out with moist crumbs. This recipe makes about 30 cupcakes. So you may need to bake the cupcakes in installments if you only have 1 or 2 muffin tins. Let the cupcakes cool completely on a wire rack, after removing them from the muffin tin.

Icing

Just whip heavy cream until soft peaks form. Next sift/add the confectioners sugar while still mixing the cream. Pipe onto cooled cupcakes and add your sprinkles of choice. I used bat sprinkles which I found around Halloween to honor the Austin  South Congress bridge bats.
